After welcoming some of Portugal’s most acclaimed Michelin-starred chefs, it’s now time to shine a light on our own culinary creations. “From Stars to Signature” marks this transition: from celebrating guest chefs to showcasing the distinctive dishes of our resident chefs, João Galvão and Bernardo Sousa Coutinho.

This menu brings the spirit of the Old Course Vilamoura to the table, featuring signature dishes inspired by the Algarve’s landscape, from the Barrocal to the Ria Formosa, with ingredients like almond, carob, partridge, oysters, and tuna. Each plate is a reflection of our identity, reinterpreted with creativity and a contemporary touch.
